Antonia Lofaso
Antonia's food is a way to get inside her world. Curiosity grew in her after she left her home in the Long Island suburbs to explore the diverse culture of Los Angeles. She believes of the fact that cavatelli and carnitas can co-exist in harmony on a single menu portrays a style that continues to evolve. Every dish she serves is filled with her unique perspective for the future as well as reminiscing on the old. Inspired by her heritage as an Italian-American, Lofaso launched Scopa Italian Roots in 2013 that was immediately a hit. Lofaso's take on old-school Italian is regarded as the one of Los Angeles' most compelling Italian eateries. Lofaso consistently serves excellent dishes at Scopa it is a local favorite. The patrons call it authentic and satisfying. Lofaso was trained by renowned chefs to acquire their specialized techniques. However, she was not afraid to make extraordinary decisions to honour her instincts. She rose quickly through the ranks at Wolfgang Puck's Spago and went on to make a difference in the kitchens of famous chefs located in Los Angeles while working closely with numerous celebrities. In 2011 Lofaso worked with Sal Aurora and Mario Guddemi to launch Black Market Liquor Bar in Studio City. Lofaso has found her home at Black Market, and through the alliances she made. Lofaso was able to enjoy the freedom to express her creativity that she longed for through this partnership. Black Market is not constrained by a single direction, and that is the intention. The first course could be potato chips and peppers dill, followed by Korean meatballs and wings. Antonia provides the overwhelming range of flavors. Lofaso's popularity has been measured by her ability to be true to herself while still being able to comprehend her audience. Her memorable performances of Top Chef Chicago and Top Chef: All Stars highlighted her individuality outside the kitchen. Her talents continue to shine in front of cameras as a Judge on the CNBC's Restaurant Startup and in regular roles on The Food Network's Cutthroat Kitchen Man vs. Child and ABC's Real O'neals. Lofaso teamed-up with Penguin Publishing to produce The Busy Mom's Cookbook - 100 Recipes of easy, Delicious, Home Cooked Meals. In this book, she describes her life as a mother, and also a pupil of the French Culinary Institute. Lofaso says that the passion for her achievements comes from the heart of the kitchen and it is through this vein that she has a an eye on the pulse. With the Chefletics brand, she is changing the look of her field by redesigning chefwear for both style and functionality. What is important to Lofaso is adhering to the vision you have set.
